Vodka is colorless and flavorless qualities that helped it earn the distinction of the bartender's least-favorite spirit. Gradually the tide has turned, and now bartenders appreciate vodka for its ambiguous but high-octane character, which can help amplify flavors in a drink. High-proof vodka (more than 100 proof) is particularly useful in this way. Vodka can be distilled from just about anything: wheat, rye, corn, barley, potatoes, apples, grape and quinoa, to name a few.
